I’ve been to India twice, and each time it has left an indelible mark on my soul. It’s not the attractions or activities that stay with you, but rather the feeling of simply being there. India is different and powerful on every level, evoking both love and dislike.

At a restaurant in Melbourne called Enter Via Laundry, I had a realization about our lack of understanding when it comes to India. The owner, Helly Raichura, serves Indian food from different regions of the country each month. It made me realize how little we know about the regionality of India and the distinct states that make up this vast nation.

India is not just about the famous cities like Jaipur and Mumbai. It is also Bihar and Himachal Pradesh, Odisha and West Bengal. Each state has its own unique language, customs, traditions, histories, and cuisines. West Bengal alone has a population of almost 100 million, equivalent to Vietnam.

It’s no wonder that we struggle to understand India. Unless you have spent a significant amount of time there, it’s impossible to grasp the depth and complexity of the country. We are left with cliches and surface-level knowledge, missing out on the richness and nuance that India has to offer.

But this lack of understanding also makes India incredibly exciting. While other destinations have gained popularity, India remains largely unexplored. It is a place where you can delve deeper into its regionality, discovering the empires and influences that have shaped the world. Starting with its diverse food culture is a good way to begin unraveling the enigma of India.

I, for one, would love to explore India for leisure and immerse myself in its distinct regions. By understanding what they eat in Gujarat or Goa, Kerala or Karnataka, we can begin to unravel the complexities of Indian cuisine and the stories behind them.
